ROASTED VEGGIE & KALE SALAD WITH BALSAMIC DRESSING

Cook Time: 30 mins
Serves: 4 people

What You'll Need:

  • Olive oil

  • 1 large bunch of kale

  • 1 sweet potato

  • 1 head of broccoli

  • 1 red pepper

  • 1 red onion

  • 3 garlic cloves (I like to add more because I love garlic)

  • 2 avocados

  • Your favorite hummus 

  • 1/3 cup olive oil

  • 1/2 cup balsamic vinegar

  • 1 tbsp honey

  • 2 tspn mustard (I like to use grainy mustard, but anything works) 

  • Salt and pepper

How It's Done:

Heat your oven to 425*. Chop all vegetables (except the kale) and mince the garlic. Add chopped veggies to a large roasting pan, sprinkle with salt and pepper and about 1/3 cup olive oil. Place veggies in the oven for about 20-25 mins. Veggies will be done when they their edges look crispy. Wash the kale and chop it on a large cutting board. Massage the kale while its still a bit wet. Add the kale to bowls and top with veggies
