
GLUTEN- FREE BANANA BREAD
Cook Time: 1 1/2 hours
Serves: 8Â people
What You Need:
3-4 overripe ripe bananas (almost all black, this way they will add more sweetness to the bread)
1 egg
1/2 tsp vanilla extract
3 tbsp coconut oil
1/4 cup organic cane sugar (option to leave this out if going sugar free)
1/2 cup maple syrup
3 tsp baking powder
3/4 tsp sea salt
1/2 tsp cinnamon
1/3 tsp nutmeg
1/2 cup almond milk
2 cup almond flour
1 cup gluten-free oats
1/4 cup flax meal
2 tbsp chia seeds
2 tbsp hemp seeds
1/2 cup pecans (optional)
How It's Done:
Preheat your oven to 350*. In a large bowl mash the bananas and mix all ingredients, going down the ingredient list. Mix thoroughly to combine. Line a 9x5 loaf pan with parchment paper and pour the batter into the pan. Bake for 1 hour- 1 hour 15 mins (possibly more). When ready, it should feel firm and be crackly and golden on top. Serve as is or with butter or honey. Enjoy this fall indulgence as a breakfast side or afternoon snack!
