EASY HASH BROWNS

Cook Time: 20 minutes
Serves 4

You can swap the russet potatoes for sweet potatoes if you are a lover of sweet potatoes like me!

What You Need:

  • 2 tbsp. olive oil

  • 2 large russet potatoes

  • 1 white onion

  • 3 garlic cloves, minced

  • 1 tsp. dried thyme

  • 1 tsp. dried oregano 

  • 1 tsp. rosemary

  • salt and pepper to taste

How It's Done:

Heat a frying pan on medium heat and add the olive oil. Use a cheese grater to grate the potatoes. Add the grated potato to a bowl, add the chopped onion, minced garlic, dried herbs, salt and pepper. Mix together. When the oil in the pan is shimmering, add the potato mixture and press down in the pan. Let the potato hash brown for about 5 mins on each side. Mix the hash in the pan and let it brown again for about 5 mins on each side. You will need to repeat this process a few times until the hash brows are cooked through, crispy, and brown. Enjoy with eggs, toast, hot sauce and avocado, or as is!
