CRUNCH WRAPS WITH KALE AND KIMCHI

Serves 2

You can add ANYTHING to this wrap, but for optimal gut health (ie. plant fiber & fermented food), make it this way!

What You'll Need:

  • Large wraps 

  • Vegan Kimchi (I like it spicy) 

  • 1 tbsp. olive oil

  • 2 cups kale, chopped

  • Salt and pepper to taste (1 pinch of each)

  • 3 Garlic cloves, minced

  • Avocado

  • Cheddar cheese (or vegan cheddar)

  • Hot sauce

How It's Done:

In a frying pan on medium heat, add the olive oil, and chopped kale. Once kale starts to sauté, add the garlic, salt, and pepper. The kale will be done when its wilted (about 6 mins). On your counter or large cutting board, lay one wrap. Cut the wrap from the middle to an outer edge with a sharp knife. You will have four sections to add ingredients. In one section, add the sautéed kale, in another section add avocado, in another section add the kimchi, in the fourth section add the cheese and hot sauce. Wrap it up layer by layer, folding them over each other. Once folded, add the folded wrap to a frying pan or grill pan on medium heat. Grill for about 4 mins on each side. You will have to do this twice for two wraps! Enjoy!
