CHICKPEA SANDWICH

Cook Time: 15 minutes
Serves 4

What You Need:

  • 1 can chickpeas, slightly smashed 

  • 1 tbsp. mayo (or vegan mayo) 

  • 1 shallot slivered 

  • 1/2 cup finely chopped broccoli 

  • 1/2 cup slivered carrots 

  • 1 tbsp. sunflower seeds 

  • 1 tbsp. capers 

  • 2 tbsp. cilantro (optional, but it adds great flavor)

Optional add in's: pickles, banana peppers, or pickled veggies

​

How It's Done:

Add all ingredients to a bowl, mix, and enjoy on sourdough bread or on top of a salad! I like to add avocado and pickles to my chickpea sandwich.
