CHICKPEA SANDWICH
Cook Time: 15 minutes
Serves 4
What You Need:
1 can chickpeas, slightly smashed
1 tbsp. mayo (or vegan mayo)
1 shallot slivered
1/2 cup finely chopped broccoli
1/2 cup slivered carrots
1 tbsp. sunflower seeds
1 tbsp. capers
2 tbsp. cilantro (optional, but it adds great flavor)

Optional add in's: pickles, banana peppers, or pickled veggies
​
How It's Done:
Add all ingredients to a bowl, mix, and enjoy on sourdough bread or on top of a salad! I like to add avocado and pickles to my chickpea sandwich.
