BANANA NUT PANCAKES

BANANA NUT PANCAKES

Cook Time: 30 mins or less
Serves: 2 people

What You'll Need:

  • 1 overripe banana

  • 1/4 cup melted coconut oil plus 1 tbsp for frying the pancakes

  • 1 tsp vanilla

  • 2 tbsp nut milk (such as almond milk)

  • 1/3 cup almond butter

  • 1 egg

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/2 cup almond flour (you may need to add a bit more if the batter is too wet)

  • 1/3 cup diced pecans

  • 1 tbsp hemp seeds (optional)

  • 2 tbsp ground flax seeds (optional)

  • 2 tspn chia seeds (optional)

I add seeds to boost the protein and fiber content of this meal, but it is totally optional! ​

How It's Done:

Add the banana to a bowl and mash it up with a fork. Add all the wet ingredients and mix together. Throw in the dry ingredients into the bowl and mix together. You may need to add a little more almond flour if the batter to too thin. You want a semi-thick consistency, like a traditional pancake batter.  Add 1 tbsp of coconut oil to your frying pan and set to medium low heat. When the oil is shimmering, add ice cream scoop sized dollops of batter to the pan. When the pancake starts to bubble, flip it over. Cook about 3-5 mins on each side. Serve with your favorite syrup and enjoy!
